For Roasting

Ingredients

Directions

  1. One hour before roasting, clear the grate of ashes and prepare a glowing fire.

  2. Wash the meat in salt water and dry it thoroughly.

  3. Remove excess fat, leaving enough for basting, and cover with buttered paper tied with twine.

  4. Hang the joint on the jack so it cooks evenly, adjusting the distance from the fire.

  5. Baste frequently with the dripping fat as it melts, using butter if drippings are scant.

  6. Remove any excess drippings from the pan before it scorches.
