What each ingredient does

Soft-shell crabs
Provide the main protein, which cooks quickly and turns tender and sweet when fried.
Egg
Binds the cracker meal coating to the crab so it adheres during frying.
Cracker meal
Forms a crisp, golden-brown coating when fried in hot fat.
Lard
Conducts heat for frying and adds richness and browning to the coating.

The step that matters

Fry in hot lard until the claws are crisp. If the lard is not hot enough, the coating absorbs fat and turns greasy instead of crisp. Frying at a proper temperature sets the crust quickly and keeps the crab tender inside.

Swap the parsley
