Bisque of Pineapple Ice Cream

Ingredients

Directions

Prepare the syrup

  1. Chop the pineapple into small pieces and place them in a bright pan with the sugar and a few spoonfuls of juice or water to dissolve the sugar into syrup.

  2. Simmer the mixture on the side of the range for a short time.

  3. Prepare the pineapple syrup beforehand and ensure it is cold before mixing.

Make the ice cream

  1. Whip the cream until it is half froth, then freeze it by itself first.

  2. Pound the pineapple and syrup through a colander, then mix it with the partly frozen cream and freeze again.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped into a froth, it gives the frozen ice cream its rich, light, creamy body.
Sugar
Dissolves into the syrup and keeps the frozen ice cream soft and sweet rather than hard.
Pineapple
Supplies the main fruit flavour and acidity, and its juice adds moisture to the mixture.

The step that matters

Cool the syrup fully before mixing. Warm pineapple syrup melts the partly frozen cream and slows freezing, so the ice cream turns out grainy and dense. Chilling it first keeps the texture smooth.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
