Cream or Fondant
Ingredients
Directions
Boil simple syrup to 45 degrees on a saccharometer.
Pour it onto a clean marble slab between iron bars.
When nearly cold, work it with a long-handled spatula until it granulates into a smooth mass.
Loosen it from the marble with a knife and work it into a soft mass with your hands.
Place it in an earthenware pan and cover it.
To use for icing, place the required quantity in a round-bottomed pan over low heat.
Stir constantly with a small wooden spatula until melted and smooth, without boiling.
Pour it over the item to be covered and smooth it with a pallet knife quickly before it sets.
