Stuffed Eggs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the eggs and bread

  1. Boil eggs for 10 minutes, then cool in cold water.

  2. Soak stale bread in cold water for 5 minutes, then wring dry.

  3. Cut cooled eggs in half lengthwise and remove yolks.

Make the filling

  1. In a saucepan, combine cheese, salt, white pepper, cayenne, lemon juice, butter, and white sauce.

  2. Rub yolks through a sieve and add to saucepan with bread.

  3. Stir mixture over heat until thickened and hot.

Fill and bake

  1. Spread a layer of white sauce on a hot platter as a base.

  2. Fill egg whites with mixture, shaping to resemble whole yolks.

  3. Arrange filled eggs in a pyramid on a dish and bake at 350°F (175°C).

  4. Serve remaining white sauce on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide the yolks that form the creamy filling and the whites that hold it.
Stale bread
Soaked and wrung dry, it adds body and helps bind the filling.
Parmesan cheese
Adds savory, salty flavor and richness to the filling.
Butter
Adds fat for a smooth, rich texture in the filling.
White sauce
Enriches the filling and forms a base and side sauce for moisture.

The step that matters

Stir the filling over heat until thickened and hot. Heating the yolk and bread mixture thickens it into a smooth, stable filling. Overheating can curdle or dry it, while underheating leaves it loose and hard to shape.

Swap the white pepper

How well each one fits the dish's main ingredients (egg, bread, parmesan cheese, pepper, lemon, butter, sauce):

  1. Parsleyfits better
  2. Capersfits better
  3. Tarragonfits better
  4. White pepperthe original

Fit is the average pairing score against egg, bread, parmesan cheese, pepper, lemon, butter, sauce. Candidates are from the same food group and used in at least 100 recipes.
