Why it works: Turnip and parsnip match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 590 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

A Round of Salted Beef

Ingredients

Directions

Prepare

  1. Skewer the tongue side of the beef tightly and tie with broad tape to secure the skewers.

  2. Place the beef in plenty of cold water and remove any scum as it rises.

Cook

  1. Boil until the scum is removed, then reduce heat to simmer slowly for about three hours.

  2. If the beef weighs more, increase the cooking time accordingly.

Finish and serve

  1. After cooking, wash off any remaining scum with a brush.

  2. Garnish with carrots and turnips, serving them on separate dishes.

What each ingredient does

Beef
Collagen in the tough cut softens into gelatin during slow simmering, making the meat tender.

The step that matters

Removing the scum while the water comes to a boil. Scum is coagulated protein and impurities that would cloud the broth and taint its flavour. Skimming it early keeps the liquid clean, and a gentle simmer afterward keeps the meat tender rather than tight and stringy.

Swap the turnip

How well each one fits the dish's main ingredients (beef, carrot, parsnip):

  1. Turnipthe original
  2. Leekfits about as well
  3. Beetrootfits less well
  4. Potatofits less well

Fit is the average pairing score against beef, carrot, parsnip. Candidates are from the same food group and used in at least 100 recipes.
