Why it works: Turnip and parsnip match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 590 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

A Round of Salted Beef

Ingredients

Directions

Prepare

  1. Skewer the tongue side of the beef tightly and tie with broad tape to secure the skewers.

Cook

  1. Place the beef in plenty of cold water and remove any scum as it rises.

  2. Boil until all scum is removed, then reduce heat to simmer until done, about three hours for 15 lbs.

  3. If any scum remains, wash it off with a brush.

Serve

  1. Garnish with carrots and turnips, serving them on separate dishes.

What each ingredient does

Beef
Forms the main body of the dish, becoming tender and savoury as it simmers slowly.

The step that matters

Removing the scum as it rises. Scum is coagulated proteins and impurities that rise to the surface as the water heats. If left in the pot it cooks back into the broth and makes it cloudy and off-flavoured, so skimming it early keeps the broth clear and clean-tasting.

Swap the turnip

How well each one fits the dish's main ingredients (beef, carrot, parsnip):

  1. Turnipthe original
  2. Leekfits about as well
  3. Beetrootfits less well
  4. Potatofits less well

Fit is the average pairing score against beef, carrot, parsnip. Candidates are from the same food group and used in at least 100 recipes.
