White Sauce

Ingredients

Directions

Make the sauce base

  1. Melt the butter in a stew-pan over medium heat.

  2. Add the veal and ham, and simmer until it begins to catch at the bottom, stirring frequently.

  3. Mix in the flour until well combined.

  4. Gradually add the broth or water, stirring to keep the mixture smooth.

Simmer and finish

  1. Bring to a boil, then reduce heat and let simmer gently for 2 hours.

  2. Season with cloves, onion, peppercorns, mace, mushrooms, and the bouquet of herbs.

  3. Let the sauce reduce to 1 quart, skim off the fat, and strain through a fine cloth.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Releases flavour and gelatin into the broth during long simmering, giving the sauce body.
Flour
Thickens the butter and broth into a smooth sauce as it cooks.
Butter
Carries fat for cooking the meat and adds richness to the sauce.
Ham
Adds savoury, salty depth to the broth during simmering.
Broth or water
Forms the liquid base that the flour thickens and the meat flavours.

The step that matters

Gradually add the broth or water, stirring to keep the mixture smooth.. Adding liquid slowly while stirring lets the flour disperse evenly, so it swells into a smooth sauce instead of forming lumps.

Swap the mace

How well each one fits the dish's main ingredients (veal, ham, butter, flour, clove, onion, mushroom):

  1. Thymefits better
  2. Nutmegfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against veal, ham, butter, flour, clove, onion, mushroom. Candidates are from the same food group and used in at least 100 recipes.
