What each ingredient does

Veal breast
Provides the meat that becomes tender during long, gentle simmering.
Butter
Adds richness and helps the veal brown when fried.
Flour
Forms a roux with the butter that thickens the gravy.
Onions
Add savory sweetness and aroma to the simmering broth.
White wine
Adds acidity and brightness to finish the gravy.
Mushroom ketchup
Adds savory depth to the finished gravy.

The step that matters

Simmer gently. A gentle simmer lets the connective tissue in veal break down slowly, making the meat tender. A hard boil toughens the meat and can make the broth cloudy.

Swap the mace

How well each one fits the dish's main ingredients (butter, veal, marjoram, lemon, parsley, clove, onion):

  1. Thymefits better
  2. Sagefits better
  3. Winter savoryfits better
  4. Macethe original

Fit is the average pairing score against butter, veal, marjoram, lemon, parsley, clove, onion. Candidates are from the same food group and used in at least 100 recipes.
