Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and bake

  1. Trim the chops of mutton or veal and season them.

  2. Place the chops in a pie dish with a little water and ½ cup of mushroom ketchup.

  3. Add chopped onion and potatoes if desired.

  4. Cover with pie crust.

  5. Bake at 400°F (200°C) until done.

Finish the gravy

  1. Remove the crust with a knife.

  2. Pour out the gravy.

  3. Let it stand.

  4. Skim the fat.

  5. Add more seasoning if needed.

  6. Bring the gravy to a boil.

  7. Pour it back into the pie.

What each ingredient does

Mutton or veal chops
Provide the meat that becomes tender during slow baking and gives the gravy its rich flavor.
Mushroom ketchup
Adds concentrated savory, umami flavor to the liquid that becomes the gravy.
Pie crust
Encloses the filling so it cooks in its own steam while the crust browns on top.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mutton, mushroom, ketchup, potato):

  1. Shallotfits about as well
  2. Capsicumfits about as well
  3. Onionthe original
