What each ingredient does

Pineapples
Provide the fruit and its acidity, which gives the jam its body and flavor.
Sugar
Sweetens the jam and, as it dissolves and concentrates, helps it thicken and set.

The step that matters

Stirring gently while the jam cooks. Sugar and fruit can scorch on the bottom of the pan during long boiling, and stirring gently spreads heat and prevents sticking and burning. Stirring too hard can break the fruit slices into mush.
