Bottled Gooseberries
Ingredients
Directions
Pick off the stems from the gooseberries and rub them with a clean dry cloth.
Place the gooseberries into wide-mouthed glass bottles.
Put the bottles in a large pot with hay underneath and between them.
Fill the pot with cold water up to the neck of the bottles.
Heat the pot over the fire until it boils, then simmer until the gooseberries turn whitish and shrink.
Remove the bottles and use one or more to fill the others.
Pour boiling water into the bottles to cover the gooseberries.
Once cool, pour enough salad oil over the top to be as thick as a penny.
Seal the bottles with bladder, label them, and store in a dry closet.
