To Keep Eggs Fresh From April to Christmas
Ingredients
Directions
Boil 9 pints of water with 2 pounds of common salt and 1 ounce of saltpetre for 20 minutes.
Pour the mixture into a pan and let it cool slightly.
Stir in 2 pounds of unslacked lime when the mixture is nearly cold.
Allow the liquid to sit overnight before using.
Each time you add eggs, stir the liquid from the bottom to ensure they are covered.
