What each ingredient does

Beef shin
Provides collagen and meat flavour that dissolve into the broth during long simmering.
Lean ham
Adds savoury, salty depth to the broth's overall flavour.
Onions
Contribute sweetness and aromatic depth as they cook down into the stock.
Carrots
Add natural sweetness and body to the finished stock.
Celery
Adds aromatic, savoury background flavour to the stock.

The step that matters

Skimming frequently during the simmer. Impurities and fat rise to the surface as the stock simmers. Removing them regularly keeps the broth clear and clean-tasting rather than cloudy or greasy.
