Why it works: Pepper and cabbage are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,081 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Boiled Beef

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Sear the meat

  1. Heat the fat from the suet and trimmings in a kettle.

  2. Sear the meat quickly on all sides in the fat.

  3. Remove the cracklings and cover the meat with boiling water.

Boil and bake

  1. Bring to a boil quickly and boil hard for 5 minutes.

  2. Add pepper and boil gently for 30 minutes.

  3. Without removing the cover, place in a 300°F (150°C) oven for 3 hours or more.

Serve

  1. Remove to a hot platter, salt well, and garnish with cress or boiled cabbage.

  2. Save the cooking liquid for stock or sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brisket or round beef
Provides the main protein, which firms and becomes tender during long, slow cooking.
Suet and trimmings
Their rendered fat browns the meat surface during the initial sear and adds richness.

The step that matters

Sear the meat quickly on all sides in the fat. A quick, hot sear browns the surface and builds flavour through the Maillard reaction. Searing too slowly steams the meat and leaves it grey and less savoury.

Swap the cabbage

How well each one fits the dish's main ingredients (beef, meat, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Tomatofits better
  4. Cabbagethe original

Fit is the average pairing score against beef, meat, pepper. Candidates are from the same food group and used in at least 100 recipes.
