Why it works: Flour and biscuit match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 889 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Fricasseed Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Dress, clean, and cut the chicken for serving.

  2. Lightly flour and salt the chicken.

Cook and make gravy

  1. Cover the chicken with boiling water and place in a 400°F (200°C) oven without removing the cover for three hours.

  2. Remove the chicken and make gravy with the cooking liquid by adding 1 tablespoon of flour rubbed smooth in ½ cup of milk.

Serve

  1. Season the gravy with salt and pepper, bring to a boil, and serve immediately with hot biscuits.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
The main protein, which becomes tender during the long, covered, gentle cooking.
Flour
Lightly coats the chicken and thickens the cooking liquid into gravy.
Milk
Adds body and richness to the gravy.

The step that matters

Smoothing the flour into the milk. Dry flour clumps when it hits liquid. Rubbing it smooth in cold milk first lets the starch disperse evenly, so the gravy thickens without lumps.
