Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dressing

  1. Soak the bread in cold water until soft, then press dry and crumble it.

  2. Cream together the chopped salt pork, onion, and butter.

  3. Mix the crumbs with the creamed mixture, adding pepper, salt, sage, thyme, and optional herbs.

Stuff and roast

  1. Wash the turkey and dry the inside with a cloth, then fill it with the dressing.

  2. Sew up the openings, tie the wings and legs close to the body, and tuck the neck under the wing.

  3. Place the turkey in a roasting pan with ½ inch of water and bake at 300°F (150°C).

  4. Baste frequently with drippings, adding more hot water as needed.

  5. In the last 30 minutes, baste with 1 tablespoon of salt dissolved in 1 pint of hot water.

Serve

  1. Boil the giblets in water until very tender, then serve with the turkey.

What each ingredient does

Turkey
Forms the main body of the dish and carries the dressing as it roasts.
Bread
Soaked and crumbled, it absorbs moisture and gives the dressing its body.
Salt pork
Adds fat and savoury flavour that melts into the dressing and drippings.
Butter
Adds fat and richness to the creamed onion and pork mixture.
Sage
Contributes a distinctive aromatic, savoury flavour to the dressing.
Onion
Adds aromatic sweetness and savoury depth to the dressing.

The step that matters

Baste with hot water and salt in the last 30 minutes. Salt dissolved in hot water seasons the surface and helps keep the roasting pan moist, so the outer skin stays tender and flavourful rather than drying out near the end of cooking.

Swap the onion

How well each one fits the dish's main ingredients (turkey, bread, pork, butter, egg, pepper, sage):

  1. Capsicumfits better
