Rice Custard

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the rice

  1. Soak the rice in 2 cups of water overnight.

  2. Boil the rice until perfectly soft, without breaking.

Make the custard

  1. In a separate pot, bring 1 quart of milk to a boil with the rice.

  2. Beat the egg yolks with 6 tablespoons of sugar, then add to the boiling mixture.

  3. Pour the mixture into a dish.

Top and brown

  1. Beat the egg whites to stiff peaks, then add 4 tablespoons of sugar and 1 teaspoon of vanilla.

  2. Drop spoonfuls of the egg white mixture on top of the custard.

  3. Brown in the oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Provides the starchy body that thickens the pudding as it cooks in milk.
Milk
Forms the creamy liquid base that the rice softens in and sets into custard.
Egg yolks
Thicken the custard and add richness as they set with the milk.
Egg whites
Whipped into stiff peaks to form a light meringue that browns on top.
Sugar
Sweetens the custard and meringue and helps the meringue hold its shape.

The step that matters

Browning the meringue in the oven. Egg whites whipped to stiff peaks can weep or deflate if overbaked, while underbaking leaves them pale and raw. Watch closely so the peaks brown lightly while the custard stays set.
