What each ingredient does

Beef
Provides the main meat, heated through so it becomes tender and warm on the toast.
Flour
Thickens the sauce as it is cooked, giving it body so it clings to the beef and toast.
Worcestershire sauce
Adds savory, tangy depth to the sauce.
Tomato ketchup
Adds sweetness and acidity, rounding out the sauce's flavor.
Mustard
Adds sharpness that balances the richness of the butter and beef.
Butter
Adds richness and fat, carrying flavor through the sauce and toast.

The step that matters

Thicken the sauce with flour mixed with water. Flour must be mixed smoothly with cold water first, then stirred into the hot sauce. Added dry or in lumps, it forms clumps that stay raw-tasting and do not thicken evenly.

Swap the lemon

How well each one fits the dish's main ingredients (butter, beef, sauce, tomato, ketchup, mustard, pepper):

  1. Avocadofits about as well
  2. Limefits about as well
  3. Lemonthe original
  4. Mangofits less well

Fit is the average pairing score against butter, beef, sauce, tomato, ketchup, mustard, pepper. Candidates are from the same food group and used in at least 100 recipes.
