Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Cook the fish in gently boiling water for 15–20 minutes.

  2. Remove the flesh from the bones and flake it.

  3. Season the fish with salt, pepper, and lemon juice.

Make the sauce

  1. In a saucepan, melt the butter, add flour, and stir in the milk with the onion and salt.

Bake and serve

  1. Pour the sauce over the fish and mix well.

  2. Transfer to a platter, sprinkle with buttered bread crumbs, and bake at 400 °F (200 °C) for 20–30 minutes.

  3. Add a speck of cayenne to the sauce if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whitefish
Provides the main body and flaky texture of the dish.
Butter
Adds richness and flavor and forms the base of the sauce.
Flour
Thickens the milk into a smooth, creamy sauce as its starch cooks.
Milk
Forms the liquid base of the sauce, giving it its creamy texture.

The step that matters

Making the sauce. Flour must be cooked in the melted butter and whisked into the milk so its starch dissolves evenly. Adding the milk gradually while stirring prevents lumps, and heating the mixture lets the starch swell and thicken the sauce.

Swap the onion
