Bread Sponge Muffins
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Set sponge as for water bread the evening before.
Mix warm water, yeast, and salt to create a batter thicker than pancake batter.
Beat the mixture thoroughly and let it sit overnight.
In the morning, dip the batter into greased gem pans without stirring.
Let rise for at least 30 minutes.
Bake in a preheated oven at 400°F (200°C) until brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
