What each ingredient does

Brains
Form the main body of the dish, which becomes tender when simmered and firm when fried.
Bread crumbs
Form a crisp, golden coating that protects the surface during frying.
Beaten egg
Binds the bread crumbs to the brains so the coating holds during frying.
Vinegar
Acidifies the poaching liquid, which helps firm the brains and mellow their flavour.

The step that matters

Dry the brains before dipping. Surface moisture stops the egg and bread crumbs from sticking evenly, and water in hot fat causes spattering and a soggy coating instead of a crisp, browned crust.
