Fried Calves’ Liver

Ingredients

Directions

Prepare the liver

  1. Cut the calves’ liver into slices ¼ inch thick.

  2. Dip each slice in a mixture of flour, salt, and pepper.

Fry the liver and bacon

  1. Heat drippings in a frying pan until very hot, then add the liver.

  2. Cook for 5 minutes, then turn the liver and cook until done.

  3. In another pan, crisp and brown the bacon cut into thin slices.

  4. Remove most of the fat from both pans, leaving a little in the liver pan.

Make the gravy and serve

  1. Stir in 1 tablespoon of flour and dilute with water or stock until smooth.

  2. Season with salt, pepper, and mushroom ketchup, then stir in minced gherkins.

  3. Place the liver on a hot platter, pour the gravy around it, and garnish with bacon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calves’ liver
Forms the main body of the dish, cooked quickly so it stays tender inside.
Flour
Coats the slices so they brown in the fat, and thickens the gravy.
Bacon
Adds crisp texture and savory fat that flavors the dish.
Mushroom ketchup
Adds deep savory flavor to the gravy.
Minced gherkins
Adds sharp acidity that balances the rich liver and gravy.

The step that matters

Heat the drippings until very hot before adding the liver. A very hot pan sears the flour-coated surface quickly, creating browning and a crust while the inside stays tender. Liver overcooks easily, so it is best cooked briefly over high heat.
