  3. Stir in bread crumbs, salt, white pepper, and mace.

What each ingredient does

Eggs
Set into the sauce when baked, giving the dish its body and structure.
Milk
Forms the liquid base of the sauce and carries the onion flavour.
Bread crumbs
Thicken the sauce and give it body as they absorb the liquid.
Flour
Thickens the butter into a roux that stabilises the sauce.
Onion
Provides the main flavour and body of the sauce once sieved.

The step that matters

Carefully slip in the eggs. Eggs placed gently into the sauce keep their yolks intact and set evenly. Baking in a very hot oven until just set prevents the eggs from becoming rubbery or overcooked.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, milk, clove, butter, flour, bread, mace):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Allspicefits better
  4. White pepperthe original

Fit is the average pairing score against onion, milk, clove, butter, flour, bread, mace. Candidates are from the same food group and used in at least 100 recipes.
