Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine chopped beef, finely chopped onion, coarse sea salt, red pepper, black pepper, and butter.

  3. Soak the bread in sweet milk, then mash it smooth.

  4. Mix the mashed bread with the egg, then combine with the seasoned beef mixture.

Assemble and bake

  1. Butter a baking dish and layer part of the meat mixture in the bottom.

  2. Slice the hard boiled eggs and place them on top of the meat layer.

  3. Cover with the remaining meat mixture and bake for 1 hour.

Serve

  1. Let cool and serve cold.

What each ingredient does

Chopped beef
Forms the loaf's main structure and provides fat and savory flavor as it cooks.
Bread
Soaked in milk and mashed, it adds moisture and softens the texture of the meat.
Egg
Binds the bread and meat together so the loaf holds its shape when sliced.
Sweet milk
Soaks the bread, adding moisture that keeps the loaf from drying out while baking.
Onion
Adds aroma and savory depth through its flavor compounds spread evenly in the meat.
Butter
Adds richness and fat, which carries flavor and keeps the meat tender.

The step that matters

Bake the loaf for 1 hour. Ground meat must cook all the way through, and a dense loaf can stay cool in the centre if the bake is cut short. Keep the layers even so heat reaches the middle evenly.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, butter, bread, milk, egg):

  1. Potatofits better
  2. Capsicumfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against beef, pepper, butter, bread, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
