Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mutton

  1. Trim the mutton and remove most of the fat.

  2. Rub the meat thoroughly with coarse sea salt, black pepper, and ground ginger.

  3. Insert a clove of garlic into the flesh near the bone for added flavor.

Roast

  1. Place the mutton on a rack in a covered roasting pan.

  2. Dredge the meat with flour and fill the space under the rack with hot water.

  3. Roast in a 400°F (200°C) oven, closely covered, until browned.

Finish the gravy

  1. Thicken the gravy with browned flour and strain before serving.

What each ingredient does

Mutton
Provides the main meat, whose fat and connective tissue soften and flavor the roast as it cooks.
Flour
Dredged on the meat it browns in the oven, and browned flour thickens the gravy.
Garlic
Inserted near the bone, it adds aromatic flavor that seeps into the surrounding meat.
Ground ginger
Rubbed onto the meat, it adds warm, aromatic spice to the surface.

The step that matters

Roast in a closely covered oven until browned. Covering the pan traps steam so the meat stays moist while the flour and surface sugars slowly brown. Too little cover dries the meat; too little time leaves the coating pale.

Swap the garlic

How well each one fits the dish's main ingredients (mutton, pepper, ginger, clove, flour):

  1. Turmericfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Garlicthe original

Fit is the average pairing score against mutton, pepper, ginger, clove, flour. Candidates are from the same food group and used in at least 100 recipes.
