  2. Season with salt and pepper; boil for 2 hours or until vegetables are very soft.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef or soup bone
Slow cooking releases flavor and gelatin into the water, giving the broth body and savory depth.
Tomatoes
Add acidity and body, and their juices help build the soup's overall flavor.
Okra
Releases mucilage during long cooking, which thickens the soup and gives it a silky texture.
Potatoes
Starch softens during simmering and partly breaks down, adding body and thickness to the soup.

The step that matters

Boiling until the vegetables are very soft. Vegetables need prolonged simmering to break down and blend into the broth. Stopping early leaves firm pieces and a thin, less cohesive soup.

Swap the tomato

How well each one fits the dish's main ingredients (beef, okra, potato, onion, celery, carrot, turnip):

  1. Leekfits better
  2. Parsnipfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against beef, okra, potato, onion, celery, carrot, turnip. Candidates are from the same food group and used in at least 100 recipes.
