Rout-cakes in the Form of Hearts, Etc
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Roll out the paste on a clean surface, using fine sugar to prevent sticking.
Form thin ropes and twist two together to create cords.
Shape the cords into hearts, rings, trefoils, diamonds, and other designs.
Place the shapes on a waxed baking sheet and let them dry.
Bake in a moderate oven at 350°F (175°C) until lightly colored.
Pipe decorative designs on the cooled cakes using white and pink royal icing.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
