Almond Cracklings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Shape

  1. In a bowl, mix the sliced almonds, ground almonds, sifted sugar, egg whites, and vanilla extract until well combined.

  2. Use a dessert spoon to scoop out the mixture and place it on a baking sheet lined with parchment paper, forming walnut-sized mounds.

  3. Space the mounds 1 ½ inches apart and slightly flatten them with a wet fingertip to maintain a circular shape, about ¼ inch thick.

Bake

  1. Bake in the preheated oven until they are lightly colored.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Bind the nuts and sugar together and help the cracklings hold their shape.
Sliced almonds
Provide the crisp, crunchy structure and nutty flavor of the cracklings.
Ground almonds
Fill the gaps between the sliced almonds, giving a denser, more cohesive texture.
Sifted sugar
Sweetens the cookies and promotes browning as they bake.

The step that matters

Flattening the mounds. Mounds that are too thick may stay chewy in the center, while spreading them thinly and evenly helps them bake through and crisp. Spacing them apart leaves room for them to spread without merging.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits less well
  4. Macadamia nutfits less well

Fit is the average pairing score against sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
