Filbert Macaroons

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pound the filbert kernels with the essence and the egg whites.

  2. Mix in the sifted sugar until the paste is firm.

Shape and bake

  1. Roll the paste into small balls, about the size of a walnut.

  2. Arrange the balls on a baking sheet lined with parchment paper.

  3. Bake in a preheated oven at 350°F (175°C) until they are lightly colored.

What each ingredient does

Filbert kernels
Provide the nutty flavor and the bulk of the paste.
Sifted sugar
Sweetens the macaroons and helps firm the paste, adding structure once baked.
Whites of eggs
Bind the ground nuts into a paste and help the macaroons hold their shape.

The step that matters

Mix in the sifted sugar until the paste is firm. Adding the sugar in stages and stopping once the paste is firm keeps it workable. Overmixing can deflate the egg whites, while underworking leaves the balls too soft to hold their shape in the oven.
