Why it works: Almond and orange are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 3,125 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Jordan almonds
- Provide the main almond flavour and body of the syrup once pounded into a pulp.
- Bitter almonds
- Add a sharper, more intense almond aroma to the syrup.
- Orange-flower water
- Adds a floral aroma that perfumes the almond base.
- Finest loaf sugar
- Sweetens the syrup and helps preserve it once dissolved.
The step that matters
Soak the almonds before pounding. Soaking softens the almonds so they break down into a smooth pulp; unsoaked almonds stay gritty and release less flavour into the syrup.
Swap the orange
How well each one fits the dish's main ingredients (almond, sugar):
- Vanillafits better
- Raisinfits better
- Figfits better
- Orangethe original
Fit is the average pairing score against almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
