To Ice and Ornament a Wedding-Cake

Ingredients

Directions

  1. Pick over, wash, and dry the currants before using.

  2. Use a large bowl for mixing and beating the cake ingredients.

  3. Beat the butter and sugar together until creamy.

  4. Mix all ingredients well and bake immediately to prevent heaviness.

  5. Cover the top of the cake with thick paper to prevent over-browning.

  6. Bake for about 1.5 to 2 hours, checking for doneness with a stiff broom-splint.

  7. Allow the cake to cool in the pan to prevent it from becoming heavy.
