Zephyr Souffles

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mixture

  1. In a bowl, whisk the egg whites and sugar together over a very low heat until you achieve a substantial white frothy icing.

  2. Add the shredded almonds and about three drops of peppermint essence, then gently mix everything together.

Shape and bake

  1. Spread sheets of white wafer on baking plates.

  2. Using a spoon, drop the mixture in lumps the size of a large walnut, spacing them 1.5 inches apart.

  3. Bake in a slow oven at 300°F (150°C) until they are a very light color.

What each ingredient does

Egg whites
Whipped into a foam that gives the souffle its light, airy structure.
Sugar
Sweetens the mixture and helps stabilize the whipped egg white foam.
Almonds
Add body, nutty flavor and a tender chew to the mixture.

The step that matters

Bake only until very light in color. Egg white foam sets as it heats, and continued baking dries the lumps and browns them. Removing them while still very light keeps them soft and tender.

Swap the peppermint

How well each one fits the dish's main ingredients (sugar, almond, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Capersfits better
  4. Peppermintthe original

Fit is the average pairing score against sugar, almond, egg. Candidates are from the same food group and used in at least 100 recipes.
