Why it works: Pistachio and vanilla match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 407 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Parisian Nougats

Ingredients

Directions

Make the nougat

  1. Boil the sugar until it reaches the crack stage.

  2. Add the pistachios, cochineal, and vanilla; mix gently.

  3. Spread the mixture flat on a very lightly oiled baking sheet.

  4. Use a lightly oiled hard lemon to flatten the nougat to about 1/6 inch thick.

Top and cut

  1. Before it cools, sprinkle with small pieces of clean broken sugar and cleaned currants.

  2. Press the toppings on with your fingers.

  3. While hot, cut the nougat into small oblongs or diamonds, about 2.5 inches long and 1 inch wide.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pistachio kernels
Provide the main nutty flavour and bulk of the confection's texture.
Sugar
Cooked to the crack stage, it sets firm and gives the nougat its brittle structure.
Currants (in the method)
Add chewy sweetness and contrasting texture to the topping.

The step that matters

Boil the sugar to the crack stage. Sugar syrup must reach the crack stage so that it sets firm and brittle when cooled. Undercooked sugar stays soft and sticky, while overcooked sugar turns bitter and can burn.
