Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Jordan almonds
Provide the main almond flavour and body of the drink.
Bitter almonds
Add a sharper, more intense almond aroma to the drink.
Orange-flower water
Adds a floral aroma that flavours the almond pulp.
Fine loaf sugar
Sweetens the drink and balances the almond flavour.

The step that matters

Pound the almonds into a pulp. The almonds must be broken down finely so their oils and flavour release into the liquid; coarse pieces leave the orgeat gritty and weak in flavour.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
