Almond Souffles

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the almonds

  1. Scald, skin, wash, wipe, and dry the almonds.

Make the paste

  1. Pound the almonds with 2 oz. of sugar, adding some egg whites until smooth.

  2. Incorporate the remaining sugar into the paste with clean hands, keeping it stiff.

  3. Roll out the paste to ¼ inch thick with sugar on the slab.

  4. Spread icing evenly on the paste and cut out shapes with cutters or a knife.

Bake

  1. Place the cut shapes on a baking sheet lined with wafer paper.

  2. Bake in a slow oven at 300°F (150°C) until very light in color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the souffle paste.
Icing sugar
Sweetens the paste and helps it stay smooth and stiff for shaping.
Egg whites
Bind the ground almonds into a smooth paste that holds its shape.

The step that matters

Baking until very light in color. Baking at a low oven temperature dries the shapes gently and sets them without browning. Removing them too early leaves them soft, while overbaking can darken the sugar and almonds.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
