Greek Gooseberry Compote
Ingredients
Directions
Cut off the tuft from the gooseberries and make a slit in the side to remove the seeds.
Place the berries in water and bring to a boil once.
Cover with a napkin and let them cool.
Heat the berries again in the same water, but do not boil.
Once cooled, drain the berries.
Clarify sugar and cook it until it reaches a thread stage.
Boil the berries in the sugar for eight minutes, then skim and cover until the next day.
Boil the berries several times with the sugar, skim, and let cool.
Place the berries in compote dishes.
Boil the sugar to a small bead and pour it over the berries.
