Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites and yolks separately.

  3. While the potatoes are hot, mix in the lemon juice.

  4. Add the nutmeg and mace to the potato mixture.

  5. Pour the mixture into the pie crust.

  6. Bake until set and lightly golden.

  7. Let it cool and serve cold.
