Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the yolks of the eggs until light.

  2. Add the milk and pour part of this mixture over the flour.

  3. Mix until light and smooth.

  4. Add the remaining eggs and milk, salt, and melted butter.

Bake and serve

  1. Butter muffin pans and fill them halfway with the mixture.

  2. Bake at 400°F (200°C) for 20 minutes.

  3. Serve on a hot platter with German puff sauce poured over them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and richness as the batter sets and the puffs hold their shape.
Flour
Gives the batter body so the puffs set firm rather than collapsing.
Milk
Supplies the liquid that turns to steam in the oven, helping the puffs rise.
Butter
Adds fat for richness and a tender texture with gentle browning.

The step that matters

Mixing the flour into part of the liquid. Stirring flour into a small amount of liquid first hydrates the starch evenly and prevents lumps. Adding everything at once makes lumps that are hard to smooth out later.
