Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce and add richness when stirred in off the heat.
Flour
Thickens the butter and cooking liquid into a smooth sauce.
Butter
Carries the flour and adds richness to the sauce.
Cream
Adds richness and a smooth, mellow body to the sauce.

The step that matters

Stir in the cream and egg yolks off the heat, and do not boil. Egg yolks thicken by gentle heat and curdle or scramble if they get too hot. Removing the pan from the heat and avoiding a boil keeps the sauce smooth.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, butter, flour, pepper, cream, egg):

  1. Nutmegfits about as well
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Turmericfits about as well

Fit is the average pairing score against chicken, butter, flour, pepper, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
