Strawberry Short-Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour and baking powder.

  3. Cut in butter until crumbly.

  4. Add milk or water gradually to form a soft dough.

  5. Divide the dough into 2 or 3 equal parts and roll out each part to fit your baking tin.

Bake and assemble

  1. Place each layer in the tin, spreading melted butter between layers, but not on the last layer.

  2. Bake until golden and layers separate easily.

  3. Spread strawberries and sugar on each layer, then add the top crust.

  4. Pour any remaining juice over the cake and serve with sweetened cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough and sets as the cake bakes.
Baking powder
Releases gas during baking so the layers rise and become light.
Butter
Cut into the flour to create flaky layers and adds richness and browning.
Strawberries
Add fruit flavour, acidity and juice that soaks into the layers.
Sugar
Sweetens the strawberries and draws out their juice.

The step that matters

Cut in butter until crumbly. Butter should stay in cold, distinct pieces within the flour. As it melts in the oven it releases steam, creating flaky layers; overworking the dough or letting the butter fully blend in makes the texture dense instead.
