Ingredients

Directions

Make the base

  1. In a saucepan, combine sugar, half the cream, and the split vanilla bean. Boil while stirring constantly for 10 minutes.

  2. Remove from heat, take out the vanilla bean, and scrape the seeds into the cream. Mix the seeds thoroughly and let the mixture cool.

Finish and freeze

  1. Once cool, add the remaining cream and freeze.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides the fat and richness that give the ice cream its smooth, creamy texture.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer when frozen.
Vanilla bean
Supplies the aroma and flavor that define the dish.

The step that matters

Boiling the sugar and cream mixture. Boiling while stirring keeps the sugar dissolved and prevents it from scorching on the bottom of the pan. Thorough cooling before adding the rest of the cream helps the mixture freeze to a smooth, fine-textured result.
