Ingredients

Directions

Make the coffee

  1. Stir the ground coffee with the egg and part of the shell in a bowl.

  2. Add ½ cup of cold water and pour it into the coffee boiler.

  3. Pour 1 quart of boiling water over the mixture.

  4. As it rises and begins to boil, stir it down with a silver spoon or fork.

  5. Boil hard for 10 to 12 minutes.

  6. Remove from heat and pour out a cup of coffee, then pour it back into the coffee pot.

  7. Place the pot on the back of the stove to keep hot without boiling for about 5 minutes.

Serve

  1. Serve hot with good cream and lump sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground coffee
Provides the coffee flavour that is extracted into the water during boiling.
Egg
Mixed with the grounds, it helps clarify the liquid by binding fine particles as it cooks.

The step that matters

Stirring the coffee as it rises. When the mixture first boils up, it can foam over the pot. Stirring it down breaks the foam and keeps the grounds distributed so the brew extracts evenly.
