Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Provides sweetness and the sugar that the yeast ferments into fizz and alcohol.
Egg whites
When boiled, they coagulate and trap impurities, which are then skimmed off to clarify the liquid.
Ginger
Adds its sharp, aromatic flavour to the liquid during boiling.
Lemon juice and rind
Adds acidity and citrus aroma that balance the sweetness.
Yeast
Ferments the sugar, producing carbonation and a mildly alcoholic drink.

The step that matters

Let the mixture cool before adding the yeast. Yeast is killed by high heat, so it must be added only once the boiled liquid has cooled. Adding it too early can stop fermentation entirely.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Dillfits about as well
  4. Gingerthe original

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
