Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the beans

  1. Soak the beans overnight in water.

  2. Drain and rinse the beans, then place them in a pot with 4 cups of fresh water.

Cook the soup

  1. Add the chopped onion and bring to a boil.

  2. Reduce heat and simmer until beans are tender, about 1 hour.

  3. Melt the butter in a separate pan and stir in the cooked beans.

  4. Add milk, salt, and pepper, then blend until smooth.

  5. Serve hot.

Butter
Adds richness and a smooth, rounded mouthfeel to the finished soup.
Milk
Adds creaminess and softens the flavor, giving the soup its cream-style texture.
Onion
Contributes savory aroma and depth as it cooks into the broth.
