To Boil Mutton

Ingredients

Directions

  1. Wash the mutton and cut a small piece off the shank bone, trimming the knuckle.

  2. Place the mutton in a pot with enough water to cover it and boil gently for three hours, skimming regularly.

  3. Remove the pot from heat and let the mutton sit covered in the steam for 10-15 minutes.

  4. Serve with a sauceboat of nut butter mixed with leeks or shallots.

  5. Prepare mashed turnips to serve alongside.

  6. Optionally, boil small onions with the mutton for added flavor.

  7. Ensure the mutton is thoroughly cooked before serving.
