Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh pork
Provides the lean meat that forms the body and bite of the sausage.
Fat pork
Adds moisture and richness, keeping the sausage from drying out as it cooks.
Coarse sea salt
Seasons the meat and helps draw out proteins that bind the mixture together.
Beaten egg yolk
Acts as a binder that helps the formed cakes hold together and brown in the fat.
Powdered sage
Contributes the characteristic savory, herbal aroma of the sausage.

The step that matters

Pressing the mixture into the jar. Packing the minced meat firmly removes air pockets, which helps slow spoilage and keeps the texture dense and even. Loose packing lets air and bacteria in.
