Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat structure and rich flavor of the sausage.
Pork
Its fat adds moisture and tenderness to the lean beef.
Fine salt
Seasons the meat and helps draw out moisture and preserve it during curing.
Black pepper
Adds sharp, aromatic heat that seasons the meat throughout.
Cayenne pepper
Adds pungent heat that balances the richness of the meat.

The step that matters

Submerging the sausages in the brine for three weeks, turning them daily. Salt must penetrate evenly through the sausage over the full curing period. Turning them daily keeps every side in contact with the brine, so the cure reaches the centre and the meat is preserved safely.
