Pork Cheese

Ingredients

Directions

  1. Remove the skin from the pork pieces and boil them until tender.

  2. Chop the meat small and season with salt, black pepper, and beaten cloves if desired.

  3. Add minced sage and sweet marjoram, then mix everything well with your hands.

  4. Press the mixture into deep pans with straight sides, using a plate to compact it and a heavy weight on top.

  5. Let it sit for 2-3 days until firm, then turn it out of the pan.

  6. Serve sliced with mustard and vinegar, typically for supper or breakfast.
