Prepare

  1. Fill a pot with water and add a handful of salt.

  2. Bring the water to a boil.

  3. Scrape the asparagus stalks until they are white and cut them to 2-3 inches below the green part.

  4. Place the scraped asparagus in cold water.

  5. Tie the asparagus in small bundles with bast or tape.

Boil and assemble

  1. Once the water is boiling, add the asparagus and boil for 1 hour (or 1 hour and 15 minutes for older asparagus).

  2. Toast a large slice of bread and cut off the crust.

  3. Dip the toast in the asparagus water and lay the toast in a dish.

  4. Drain the asparagus.

  5. Arrange the asparagus on the toast with heads pointing inward.

  6. Serve with melted butter.

What each ingredient does

Asparagus
Is the main vegetable, cooked until fully tender in boiling salted water.
Bread
Soaks up asparagus water and butter, serving as a moist base under the spears.
Melted butter
Adds richness and fat that complements the mild flavor of the asparagus.

The step that matters

Boiling the asparagus for the full time. Asparagus stalks are dense and need a long, steady boil to turn tender all the way through. Stopping early leaves them fibrous and woody, especially thicker or older spears, so the time given for older asparagus should be followed.

Swap the asparagus

How well each one fits the dish's main ingredients (bread, butter):

  1. Leekfits about as well
  2. Potatofits about as well
  3. Tomatofits about as well
  4. Asparagusthe original

Fit is the average pairing score against bread, butter. Candidates are from the same food group and used in at least 100 recipes.
